Does anyone with an RO machine have trouble with niter accumulating in their flue pan due to more concentrated sap entering the evaporator?

I guess I can only say no to that question. It is no worse than it was before the RO. Are you still debating the RO vs. the steamaway?

No, I think the steamaway is out. WVM (Brandon) about has me convinced to either add a preheater and steam hood or buy a larger evaporator. Of course, if I do that any time soon, I'll have to move into the sugarhouse since my wife will disown me! 8O :D :D

I might consider an RO at some point. I was mainly thinking of another sugarmaker that has a 3 x 10 that is all flue pan that runs into another standard pan evaporator to finish the syrup.

I was always concerned that if you concentrate the syrup too much in the flue pan, you would have problems with niter. When I've had too much niter in my flue pan, everything practically jumps out of the pan if you boil very hard.
