Any opinions on if it would be worth it to fab up some pans out of carbon steel for a first time hobby operation when there is a stack of 16 ga. 4x10 sheets sitting on the shop floor?

Several guys have used carbon steel to make pans with good results. You just have to treat them a bit different to stop rust. Once you boil in them once the steel is coated with niter and would be the same as SS untill you clean it again. You have to make sure you clean the bottom good after your finished for the year also as sometimes the soot will pit the steel.

I would think the only metal you wouldnt want to make pans out of would be Lead. Didnt the first settlers use cast iron pots.

They used cast iron pots for years around here. A lot of farms around here have one of those huge pots hanging in the yard for decoration. The syrup had to have looked like Haynes's coffee when it was done.
