A question?If you get behind with cooking does it make the sap last longer if you would boil it for a short time then come back and finish later or not?Or will sap spoil at 3% the same as sap or lets say 10%.just trying to keep as much sap good without havin to sell or cook 20 hrs a day.The quick fix I am sure would be less taps or bigger evaporator,but that won't happen.As we all know we all eat,sleep,and breath maple syrup.Its all about FUN FUN FUN
