A question?If you get behind with cooking does it make the sap last longer if you would boil it for a short time then come back and finish later or not?Or will sap spoil at 3% the same as sap or lets say 10%.just trying to keep as much sap good without havin to sell or cook 20 hrs a day.The quick fix I am sure would be less taps or bigger evaporator,but that won't happen.As we all know we all eat,sleep,and breath maple syrup.Its all about FUN FUN FUN

Boiling will kill the micro organisms currently in the sap... So Thats what I do.. try to boil all the sap I have on hand if it looks to be a while between runs.
