filter press

My boss and i run a 1200 tap sugar house in vt. Last yr was first year of operation. We used felt and papers to filter and boss has bought a dominion & grimm 7 plate filter press. Has no instructions with it. im looking for some imput on use. Anything you have to offer would be greatly appreciated. We made 375 gallons last yr is this filter press good size for our operation?
