Just finished tapping...! 38 on line, 192 on buckets. Sugar house is cleaned, tanks are ready to go, and arch has a fire built ready to go. Just need some warm weather.

you already tapped with buckets down there? i want to up here in georgia but scared its to early.

I think the worry about tapping buckets too early is overblown. Last year I hung half my buckets on 2/10 and the other half on 2/25 and both ran fine through the season. In fact, I was still getting good sap when most other folks around here were shutting down. The main thing you need to be mindfull of is not to let them freeze/thaw/freeze as you'll end up with a bunch of leaky tin!

If I remember right, Proctor did some research on tapping timing and came to the conclusion that there is more wiggle room than once thought. We tap for buckets the third week in February almost every year.
