Why don't anyone use flues in the front (syrup pan)? Probably a dumb question I know.

Flues become a problem when you get close to syrup. You need a flat pan to finish and draw off the thicker syrup without risk of burning.

The only dumb questions are those that you don't ask!

Ah gotcha... I knew there had to be a reason for not using flues in this space.
