I am looking for information about T316 stainless steel. Most of the information I have found on this site is that people use T304 stainless... I searched the internet and found that the % of material differs between the two and that T316 has something else added to it. Apparently T316 is used mostly in the marine industry.

So is T316 stainless okay to use for an evaporator pan or not?... any info will be a help.

Either is fine, 316 is just usually more expensive than 304, 304 is made in high volume. The L series in either 304 or 316 is not quite as strong, but better handles heat for welding.

316 is more corrosion resistant than 304, and more expensive. Either will work for an evaporator but there is no need to spend extra for the 316.
