Single Lapierre mechanical releaser

Can you adjust the level of which the releaser dumps at? Say 3/4 instead of completely full?

Ummm, yeah you could....but why would you want to???
On the rod that has the sliding float you just need to put something on it above the float to trip it before it is full. You could put a piece of 5/16 line on it or screw on a small hose clamp. Clamp is probably better....The more often that thing dumps the more frequent your vacuum to the tree is in limbo though. Less vacuum-less sap!
