Well I boiled down my first sap for the 2010 year I had 110 gal to run through my new Evaporator and wow did it do good. Just wish I had more sap to run through it. It sweetened the pan nice and oh that smell of it cooking. I had forgotten just how good it smelled. We are having a real cold snap here in KY so the sap run will be off for a few days but I will be ready once it starts back. Has any one else cooked any yet?

Sure rub it in rub it in. We are all in the deep freeze up here I am thinking atleast 6 more weeks. 110 gallons on your new rig probably was a big tease. I hate the first run it is bitter sweet. Just enough to sweeten the pans, maybe a 2 hour boil and time to shut her down and wait for more. How long does your season last down there and do you usually start the first of january? Keep us posted.

It was 2.5 hours of boil time and you are very right just enought to make you want more. It runs from Jan to Mar. Or at least it did last year

Tim,
Where is Cadiz located in KY. I met some amish guys at Henry Brenemans Seminar in Oct. they are from Hendersonville I believe, They picked up there new RO machine. They have over a 5000 tap operation. they needed a RO real bad. My sister lives in Brandonburg about 30 mile south west of Louisville. There is a guy who lives in Meade County that make a small amount of syrup each spring. His name escapes me at this time but I have it written down somewhere.

Visiting inlaws Grand Rapids Mich. and its cold and overcast doesnt look like the sun will ever come out. Looking for the Vitamin D pills how do the live without the sun around here. Will make a quick trip to Wisconsin to pick up a pan and then back to Colorado to wait till March 15 and start tapping. It has worked most everytime so we will avoid reading weather reports and what other traders are doing untill the time comes:cry:
