I am doing a research project for school and I need someone's opinion on how much more surface area there is in a flue pan compared to a flat pan in percent. I know there is a huge difference, but I need an actual number. Thanks for anyone who can reply.

That is not a simple answer. The best way is to actually measure your pans. Syrup pan is easy but to do your flue pan just measure one flue multiply the dimensions then multiply by the number of flues. Around the perimeter is a little more flat space that can also be added. The reason it is not a simple question is that some manufactuers may make 5",7" or 7.5" flues. Some have angled ends others are square. Another thing that may vary is the pans. On a 3X10 arch you could have a 3X3 syrup pan and a 3X7 flue pan. Or you could have a 3X4 syrup pan and a 3X6 flue pan. So the percentage will change depending on your set up.

By my feeble calculations I am getting about 320% more surface in my back pan as opposed to a flat pan.

2' x 4' = 8 SF surface area
1 flue- 16'' x 44''=704 SI / 144SI = 4.88 SF per flue x # flues
4.88x 8 flues = 39 square feet of heating surface
