Has anybody bought a max pan and what do you think about it. Does it really boil what they say it will do?

I don't have one, but I know someone who does and they claim it is just as good as Leader claims. This person makes the same amount of syrup with the new setup (high efficiency oil arch, Max pan and new SteamAway) and burns half the oil he did before.

The H.P. flue pan is certainly efficient to create evaporation.
But excessive evaporation will cause niter build up in the flues.
Such situation can cause unpleasant surprises.

At the point of transfer between the flue and the syrup pans you should have a brix reading of 30% or less.
This is why on modern evaporation system we use more flat bottom pan surface to finish the syrup,
