Dumb question, what is the web pan gasket used for? Not sure if I'm going to need some or not. I plan on running my to big pans directly over the fire and my preheater in the back of the arch. Any thougths or suggestions? I plan on starting construction tomorrow, weather permitting of course.

The pan gasket is what the pan will sit on between the pan and arch rail. You dont need the gasket to get started. Keep in mind that the pan should sit on the rail about 3/4". The gasket will keep the pan sitting nice and snug on the rail and will take up any high spots. It will also keep cool air from entering the arch slowing down the boil. You should also use a 2" wide strip of blanket between the pans.
