Now that i am ready to make my pan. Kenwp made the suggestion on another thread. To build it half length wise and half cross ways. How long should the part of the pan that runs parallel with evaporator be? How many dividers and at what spacing? The other part should have how many dividers and at what spacing? Thanks for any imput. Butch

What I have seen as the norm is 2/3rds flue pan and 1/3rd finish. I would put 2 dividers in the flue pan that way you have 3 compartments running longways front to back in on the far left or right and then you will come out and into the syrup pan with 1 divider running sideways. divide the spaces evenly and make them tall enough to keep the boiling sap/syrup from splashing over and mixing. If you want the draw off on the right looking at it come into the flue pan on the left back corner.

somebody should make/market a combo pan for a 275 gallon fuel drum arch raised flue and crossflow syrup pan all in one pan...stainless of course.
along with a one piece steam hood for it and maybe a preheater.
