I just picked up a Lapierre/waterloo/small 18x63 and am concerned that I should have picked up a bigger one... can anyone with this model tell me their experience on evaporation rates?
New to the hobby - moving from 30 in 2009 to 100 in 2010

You're right that you should have got a larger evaporator.

Littlesap Im lookin at the lapierre catalog and there is a 18x60 junior model with a 42inch raised flue and an 18 inch syrup pan is that what you have. It is rated for up to 150 taps which in my opinion is on the conservative size. I would bet you will be pushing the 20 gph mark. I see regular boil days of 40 on my 2x6 with no add ons. I think you are gonna be fine with 100 taps. If you outgrow it there are alot of guys looking for smaller rigs and if you take well care of it you will still get a good dollar for it.

For 100 taps, it should be the ideal size. If you outgrow it in a couple of years, you won't have much problem selling it for close to what you paid for it or maybe more if you bough it new. It will be a good unit to get your feet wet on as it is a real evaporator if it has a flue pan.

I did 150 taps on a 18x16 inch pan so that would be big enough for a 100 taps no problem.
