im in the process of buying a new evaporator and ro the ro should be fairly easy to run its a inline airablo that permeates 50 gph. but the evaporator i feel will be harder to run as i have never cooked with an evaporator before its a 2x8 waterloo raised flue '01 model with 6 foot flue pan a steamhood and preheater and forced air.
any advice would be acceptedand greatly appreciated . thanks

How come nobody ever buys a used new evaporator. Your doing better then me. I am still trying to figure out how to get to 9 gallons a hour evaporation rate.

if you want a higher evap rate you could buy my big pan and arch the pans a 30"x7' flat pan it will do between 15-20gph depending on the weather
