I'm working on the new sugar house and tonite i"m looking at things and was wonder about make-up air for conbustion of the wood fire. This is a pole barn insulated and fairly tight for air loss,in floor heat system, hoods on the pans. Am i going to run into problems?

Your best bet is to bring an air duct in from outside to supply the forced draft (or atmospheric draft if you have it. This will reduce cold drafts in any possible air leaks and the fire will burn better.

If you are going to have a functioning cupola make it more than large enough for your evaporator and you will get alot of air through that as well.
