While evaporating last season there was not a wisp of smoke from the stack of the new evaporator once things got hot, even with wet wood. Seen some chug smoke like an old locomotive. Whats the difference?

The black smoke is un-burnt fuel. If yours is not smoking you are use all the fuel in the wood, that is why some arches have air blowing over the top of the fire to burn the rest if the fuel that would otherwise go up the stack.
