as some of you know im building a new evap/arch.but sense i have the time and a extra fire box im gonna build two.the only thing i dont have extra is money(who dos) so the second is gonna be a 24"x36" flat pan with a 22" square syrup pan.my question is what would the optimal clearence/depth be for the arch/bottom of pan?ive never boild on a flat pan evap,only on raised flue pans.........somebody help me out????????????? thanks
