Right now, I am running on a wood fired WF Mason 2x4 raised flu wood fired evaporator. The front pan is about two feet wide, and a foot and a half long with one divider going down the length of it.
The syrup doesn't really seem to move from one side to the other unless I open the flow valve from the fluted pan more than just a trickle. And I can never seem to get my thermometer to get near 7, which I think is because the syrup is spread out throughout the entire pan.
I was curious, would adding more dividers make the syrup flow better? Would having three dividers also possibly allow me to get a better temp reading because theoretically the stuff closes to the drain off would be thickest?
