Amish had a sale in southern Indiana. I went to bid. Had a nice set of leader soldered pans. divided front and drop rear. I went to 3800 before the bidding was over.. It was a decent unit. However moving it would have been a real Booger. Fortunately the son bought it and it will not be moved.
So now I have given up on buying an evaporator,. I can weld that up myself. My 2x4 flat pan is not fast enough.Although I do not wish to go to the expense of a drop flue pan. I would like to either fabricate a larger divided flat pan or buy one from someone else. Preferably welded.I really am not interested in a soldered pan.
I was thinking of the lines of a 3x6 flat pan.. Am I nuts in this endeavor?

No your not nuts, as Cheryl would say "you just have a PROBLEM"!:)
Keep hitting at it the pan will start to come together for you.

I paid $3,500 for my Waterloo 3' x 10' Raised Flue evap. with soldered stainless pans 19 years ago. Looks like I can get more than I paid for it if I sold it today and I've made 2,500 gallons of syrup on it!

Not a bad investment.
