It should be 11 lbs. per gallon minimum to be legal.

Going by the numbers published in the USDA National Nutrient Database, a gallon of 67 brix syrup weighs 11.358 lbs.

In NH syrup needs to be 66.9 brix so 11.3 is close enough.

So, 11.3 is "close enough" to 11.358, but 66.9 isn't close enough to 67 ??
OK, if we want the weight of a gallon of 66.9 brix syrup, it would be 11.347 lbs., again basing it the numbers published in the USDA National Nutrient Database. It's just as easy to be accurate.

In Canada we used Imperial Gallons. An Imperial gallon of maple syrup weighed 13.3 lbs. Now the government decrees that we use liters - a liter of maple syrup weighs 1.33 kg or 2.93 lbs. 0.833 Imperial Gallons = 1 U.S. Gallon.
