I boiled 96 gallons sat,only got less than a gallon ,thought for sure would be
closer to 2 gallons I used a hyd,for the first time and It seems syrup is much
thicker than usual In the past used candy thermomter at 219 deg question is I tested hot right out of finishing pan floated right on second red line is this
correct? no directions it had a this scimcoat in fridge in morning thats why i think its thick does taste awsome though

It should be the top line of the 2, the second line is for cold test or 60 degrees. If I understand you right it is to heavy

What was the temperature right out of the syrup pan?

My Vermont tested hydrometer has the lower red line for syrup at 60 degrees F. (cold test)

The second upper red line is for syrup at 211F. (hot test)

So as the syrup heats up it gets thinner and the hydrometer sinks deeper.

You need to use an accurate thermometer in conjunction with the hydrometer.

Zippy: When you said the second red line, are you referencing the bottom line? The hot line is the top line.
This is my third year and had to learn alot the hard way. I put up 6 qt's this weekend and was good.

As long as you pour boiling syrup directly from the evaporator into a warm hydrometer cup or scoop boiling syrup directly into the cup, you can use the Hot Test Line.
