A friend of mine in VT bought a new 2x4 leader drop flue evap.

He had problems on his first boil where syrup seem to be developing in his flue pan.

His evaporator turned out to be out of level somewhat and it was shallower in the front pan than the back pan.

My question is: Should a Drop Flue evaporator be installed perfectly level?

Or should you make the front slightly lower than the back to allow the syrup pan to run deeper?

Needs to be perfectly level to allow the syrup to flow thru it as it is designed. If it is off level any way, it is not going to function properly and allow the syrup/sap to flow thru it correctly and is a recipe for disaster.

If he thinks he has nearly syrup in the flue pan, raise the level 1/2" to an inch next boil after he gets it perfectly level and this should allow it to get diluted enough to flow thru the evaporator and get to the correct drawoff location.
