View Full Version : Reverse Flow Syrup Pan

Hi guys,
I have a question, Why do they make some evaporator pans reverse flow?
I'm new to this hobby and I am not sure why they would make a pan like this.
I assmue its to keep the pan cleaner. Is it important for a small 2x2 pan,
or just for the big industrial type.

It keeps niter from building up as fast so the pan doesn't need to be cleaned as often. As far as I know all pans have dividers. The older 2x2 pans had two channels, the newer ones have 4.
