Tapped in New Paltz, 2/22

We put our first 9 taps out on 2/22. Collected 5 gallons yesterday. Got a few more taps to set, but ran out of buckets. Our second year doing it and we already have more sap than we got last time. Going to need to upscale the evaporator this year from the propane burner and stock pot. ;)

I miss New Paltz.

Grew up in Poughkeepsie and spent a lot of time exploring around Minnewaska and Mohonk Mountain House. Twenty years later and I have not found a cooler place to go hiking.

Got a little sap coming in southern nh today.

I grew up near there and always thought that New Paltz was a cool town. I think all that farmland that's protected for floodplain reasons makes it a beautiful setting with the mountains behind too.

Yeah, it's still a nice area, but "town" has gotten bigger than it used to be. Mohonk and Minnewaska are still nice and the flats still flood every year. ;)
