Looking at a 2' x 4' pan. Price aside what are the advantages and disadvantages of each. This will be going on a homemade evaporator. Any advice is appreciated. Thanks.

Divided is the way to go. They control the syrup as it boils down keeeping it from mixing with the fresh sap as it enters the evaporator. Its called continuos evaporation and drawoff. Open pan is batch cooking. You need to have a valve in the divided pans or it to is a batch pan.
