Does the rate water evaporates change when you have a more concentrated suger mixture in your pan or does it stay the same.

When your boiling 2% sap 98% of it is water that boils at a lower temp than finished syrup. So when you are boiling almost finished syrup most of the heat is keeping syrup boiling just to get the last water out of it. So the lower the sugar content the greater evaporation rate you have. Im not sure what I just said but I kike it.
