Is it possible to use alumium pans to boil? I haven't seen anything on here about that so i was wondering how feasible it was.

I've boiled in aluminum pots, and preheated sap in aluminum cake pans sitting on the edge of those pots. Feasible? Sure. How big a pan are you talking about? Is it open or channeled?
I haven't heard a lot about aluminum pans. There must be a reason. I'm gonna guess cleanup.

There has been some talk about what aluminum might leave behind in the syrup. Kind of like lead in our solder. Most say that currently they arn't looking for aluminum residue in syrup but it could be there and they could start looking for it at some time. I don't believe they are real sure about the health risk at this time. For the most part it should be safe but don't be surprised if some day they tell you not to use it.

I think it leaves a metallic aftertaste. sap is somewhat acidic and as a result can basically etch the aluminum to a certain extent. i would look for stainless pans if I were you.

Same reason why aluminum cans are coated prior to being filled with soda and beer. They will alter the taste and color of the syrup.

I have also finished syrup in aluminum pans in my backyard operation. I have access to some large pans but wasn't sure about all of the issues thatg were brought up here. I think I'll let them go to the recycling yard.

Keep in mind they might make nice steam hoods.
