View Full Version : 2x2 syrup pan with just two compartments

the syrup pan on my evaporator has just two compartments in it, what is the advantage or disadvantage to this over the ones that seem to have narrower channels? does it mean ya draw off more syrup at a time but it takes longer to get there cause its like a bigger batch at once in the section?

Yes, the syrup might be a little darker but you get more at once.

ahh ok, yea i thought it might darken from longer time, but thats ok. so ya still can draw off relatively acuratly and reliably?

In a four channel or three channel (like mine has) allows the gradient to define itself a little more than a two channel rig.

so by define the gradient better, do ya mean that im likely to have trouble drawing off syrup at the right density?

No, only draw off at the right density. Any sloshing like drawing off to fast and then shutting the valve to fast or the float not adding sap evenly will ruin the gradient easier than with more channels.
