I have the oppertunity to buy a 2x4 cross flow pan ,one divider ,for $200.00 to use as a syrup pan . Would it be better to save my money for a reg 3 divide, 4 section syrup pan.The cross flow pan would be a quick option better than the resturant lasagne pans I am using now.I would have to fit the valves on and we have someone who could tig weld two other sections in

it is better than lasangia pans, i would buy the cross flow it doesnt matter really how many sections you have when your going from sap to syrup in 1 pan, more sections is just going to give you smaller draws, maybe a little lighter syrup too, there is nothing wrong w a 2 section cross flow, i used a 2 section 6ft cross flow last year and it worked very nice and made fancy syrup, i would buy that instead of a regular pan you dont need to do any thing to it, just put it on your arch (im assuming its concrete blocks) and go, works great the way it is, you can add dividers if you want but i wouldnt
