Looking for a recommendation on how wide the lip should be on a 2x4 partitioned pan. I am having a warming pan made as well and was wondering if a 1/2" lip is sufficient or should it be larger?

Also was wondering if a 1/2" NPT fitting is sufficient for the valve size.

shawk,
Doesn't look like your getting a lot of help here.
I would think that a 1/2 inch lip would work just fine. The lip might give your pan and partition a little more strength just depends on the gauge of the material.
Now the draw off opening. I would recommend not going below 3/4 inch for your draw off port. I think the automatic draw off valves are 1 inch? You may never want to use one but I would error on the larger size.

The reason you should go to 1" is that the syrup when boiling is slow to go through the valve. Plus you can draw off faster should you get alot of syrup in the pan. And as Sugarmaker said having a stiff lip on the top will make the pan alot stronger if it is only a 2X4 then 1/2" is probably enough
