December Sap

Its 50 degrees out right now,a friend of mine just called , said he tapped a tree this morning and just got enough sap to float his hydrometer, 3.75% it measured ,not bad ,but we need some cold weather and soon. This an't right.

The more that it goes up and down the tree the sweeter it will be come time to tap.

why is that?
just curious to know, i like these funny weather things they give me some thing to think about in chemistry class

I don't know the chemstry behind it but I know it to be true. I think that 3 year ago we had a warming and cooling winter and we only had to boil 27 or 28 gallons to 1 of syrup.
