Will try to go to a homemade flue pan and syrup pan. How small a size pipe to connect the two can I get away with? Will going to small cause trouble? I have 3/4 pipe connection now.
just want to see what you think?

I guess the real deciding question is, how big are your pans?
We have a 2x5; 2x2 syrup and 2x3 flue.
They are connected with a 3/4" pipe and ball valve.
Works just fine.

I would say 3/4" will be fine.

Make sure the ball valve you use is a full flow they are a true 3/4 valve. Most sweat type are what you want.

I would make sure it don't have a bunch of plastic inside around the ball valve part too as I would be afraid the plastic would fail with the continual flow of the hot syrup thru it.

By full flow he means full port (that is the official designation, it means the hole thru the ball is a full 3/4" hole). The only time a 3/4 full port wont be enough is if you have a serious foam up, boil dry. To handle this just have a bucket of sap handy to dump in instantly. You will be ok.
