Just wondering how many people out there work with a warped pan. I did mine last year, not to bad, but still it warped a bit, and am wondering how many others are out there. One supplier I talked to said " There are two types of sugar makers out there, ones that have warped a pan and those that will." Do you just live with it or replace it?

Depends on the amount of warp. My current pan (knock on wood) is warp free but I made syrup for years on a pan with several warps in it. The key is to make sure all areas of the pan have an adequate covering of sap/syrup and that a gradient can be maintained. I had to run the pan a bit deeper than I would have preferred but that was much easier than the $ for a new pan.
