I made a few cases of cream this morning and under estimated the number of tubs I would need - and ran out. Now, I have about 3/4 gallons of cream bulk packed in a couple larger plastic containers. Anyone know how I re-soften it to re-pack in smaller containers?

Heat it up a little bit and then put it in the smaller containers. I usually spoon it into a saucepan and put it on the stove with the lowest flame and stir it till it's ready to pour.

I don't know how set up your cream is, but I often pack mine at a later time. It does get pretty thick, but I've found an ice cream scoop with the thumb "trigger" works really well.

I would throw it in the freezer and when you are ready to repackage, take it out and let it stand until room temperature and then put it in your container. You will find that it will soften up very nice after freezing, no need for reheating and taking a chance of making it slightly grainy.
