View Full Version : Beginner boiling question

This was my first season making syrup and i had a question about sap boiling. Is it possible to have your pan boiling too much? I use 2 aluminum foil steam table pans on a concrete block evaporator. Each time i have boiled i have had a massive rolling boil in each of the pans with a stack temp of 450 deg F. This allowed me to evap about 5-6 g/hr. Is this too much of a boil? Should I try for just a slow boil?? Can this rolling boil effect the quality and color of my finished syrup? I only boil when I have collected 25 gallons of sap.

The only problem with boiling too hard would be if the sap is jumping out of your pans. It sounds to me like you are doing everything right and have a good evaporation rate.

boil as hard as you can. rip it from front to back

With those type of pans, it will take very little heat to make them roll like crazy. You can't make it boil too hard as long as you can keep it in the pan.

be careful with the aluminum. when we started 4 years ago we melted one and lost the load.
we had an aluminum pot on a turkey fryer
