MY first post! I have 2 questions....what's up with the brown sap? Is it safe to use?.....and.....How do I use this new hydrometer?

I think brown sap comes from rain water running down the tree and getting into your buckets. I would dump it.

If its brown maybe your trees are letting you skip the whole boiling stage and putting out straight syrup for you haha.

Joe,
Using your hydrometer is simple. Just have a tall cylindrical object to put it in, fill it with syrup thats temperature ready to drawoff, then once the top of the syrup is at the hot test red line (the top red line) then you know your syrup is ready to drawoff. Best of luck.
