can anyone tell me roughly how much evaporation rate you lose with condensation? I have a set-up very similar to that of a half-pint, but larger. I just added a preheater just like the half pint has, but it is 6" wide on bottom and 10" high. I went with a narrower and taller pan to avoid bottom surface area.
It is worth the higher temp sap coming into the pan and have the condensate dripping back in? Or is it better to let in sap cold and take longer to bring it to a boil?
