What do you do if you go a tad bit beyond syrup?
I am think I could just draw off some a tad bit early and add this concentrate to the stuff I took just a little to far.
Any thoughts?

I always draw off at past syrup and thin it down with thinner stuff off of the evaporator or condensation from the steam hood, either way will work. The reason I do this is that it is quicker to thin and cheaper/uses less propane than having to concentrate it further and also uses less buckets for storage until I can get it canned off.

I'm with Brandon, I draw off a bit heavy, test it, and if needed, take a bit from the section before the syrup section to thin it to what I want.
With a filter / canner this year that seems to work great.
I would rather have it a tad heavy than a tad thin. Being a tad thin now you have to watch the evaporator and the tad thin stuff!
Just happens to be what I do!
