so why do some people say and spell it SIRUP

That's how it's spelled in Canada. I think it's the French spelling of it.

Hold on, correction; Sirop D'erable Pur is the way pure maple syrup is spelled in canada. I just checked.

Ther is an old pamphlet that the Ohio Exstension service put out that tells how to make pure Maple Sirup. i always am a bit taken back when i see that spelling of it.

nor have any of the people that say it but thats always what i thought must be a french thing cause the three times i have seen it in print has been out of canada
