I just bought a used evaporator and among the many questions and doubts I have in my mind about running it for the first time is what am I going to put the finished syrup in will one of those blue or white plastic barrels hold up to the heat of the syrup straight off the evaporator I can get some food grade 30 and 55 gallon barrels that had peroxide in them so they are easy to clean what do you guys use?

How many taps and what size is your evaporator?

I would consider buying some barrels directly from a maple dealer. There may be an expense up front but it will pay for itself over time.

I draw off directly in 5 gallon food grade buckets and it don't affect them. They hot pack syrup in the plastic barrels or 5 gallon small barrels, so it shouldn't be much different.
