I am going to buy a 20 x 30 flat filter and prefilters from the mapleguys. My plan is to use a 2 X 2 SS syrup pan and build a filter frame using some heavy 1/4 wire cloth. Than pan has a valve.

Any input on flat filters as oposed to cone filters.

Flat filters don't plug up as fast as cone filters do. I think that you will like them.

I use a flat filter & prefilter for syrup right off the evaporator. This takes a lot of nitre out. Then the syrup goes to the finisher and to the filter press for final filtering.
I find the flat filtering a must and it saves a lot on your final filtering.

I made a flat filter pan last year. Here's a couple of ideas. I bought a 16"x28" SS heat table pan and cover from the local resteraunt supply store out of the scratch /dent section - $20 (they had many different sizes and were barely scuffed). Put 4 SS bolts through the pan to support the filter rack. Found a new SS bbq rack and cut it down to sit on the bolts. Drilled a hole in the bottom of the front wall of the pan for valve and a small hole higher on the all to recieve the digital thermo. Works great and the whole thing cost under $50.

Works much better than the old cone filter in the coffee urn.

Just don't use galv wire for your rack. Try to find some SS.
