I use cleaning vinegar (10 %) and water to soak and clean my pans and they come out clean and bright as new except for some of the burned on foam which is about an inch or so above the sap and syrup levels. A large producer told me to forget about it, as it does no harm as long as the pans are clean up to the sap and syrup levels.

In your opinion, is that right or wrong?

And if you do clean it off, how do you go about it?

He's right but I don't like it and I clean mine. An acid soak and wash is best. If you do the fermented sap clean then just fill above that level. It will take a little scrubbing to finish but it will clean up. The scale you may have to use a copper scrper on.
