Lean to sugar shack cupola?

I presently have a makeshift open lean to attached to my garage. I plan on ripping it down this summer and putting up a new, totally enclosed lean to attached to my garage. It is a cinder block garage. My question is on getting rid of the steam? How have others dealt with it. Some type of vent on the top against the garage, windows on the top near the garage wall or other ideas??? Really don't want to use a fan because of all the moisture.

I assume you're wood fired. If so then I would recommend a totally disconnected and isolated structure set a proper distance away from other structures for fire protection. And, your insurance policy might exclude coverage for your current situation. Good luck.

My evaporator room is an enclosed lean to roof. I have a 2x6 evaporator and this is what i did. I cut a hole in the roof above the evaporator its about 4' wide and 8' long, just a little bigger than the evaporator. I then built a new roof slightly bigger than the hole about 18" above and parallel (same slope) to the original. I have hinged fold down panels that are connected to ropes that I can open and close from inside allowing for one or both sides to be open as needed during boiling. Its not your traditional looking cupola but it has been very effective for 15 years.

Thanks for your reply. My agent inspected my property a few years ago and didn't see any problems. I will just be enclosing what I have now.
