Last season was my first time with my hood and pre-heater. Hood was made by Leader for my 2x6. I noticed last year some steam was leaking out the rear of the pan/hood close to my stack. There must have been some sugar in it because it cooked to the rear of my pan and was a real pain to clean. Anyone else have an issue like this? Is there any type of gasket I can put between the hood and flu pan?

If it doesn't affect your boiling rate or your ability to make syrup I wouldn't worry about It.

A piece of arch board or ceramic blanket or even a piece of metal between the back of the pan/hood and the stack will deflect the heat off the stack. That heat off the stack is burning what is splashing.

Yup, I put a piece of stainless between my stack and the pan and it was enough yo cure the scorching on the back of the pan.
