A guy on Facebook marketplace is selling the perfect size stainless steel box with a full back lid that was used for sanitation of medical equipment, it even has a heating coil and it... Should I have any hesitation picking it up and converting into a bottler?

I practice the art of repurposing as often as I can- ask anyone who knows me. However, if were me, I would not use that piece of equipment for food making purposes. Yes, it's probably clean and all that, but I'd be embarrassed when a sugarhouse visitor, who also happened to be a healthcare professional, recognizes the thing and sees what I'm doing with it.
Similar to the piece of homemade sugaring equipment I saw years many ago where the frame was made of overhead manure trolley from an old dairy barn. I recognized it...

Ok, fair point...although I'm pretty much a family and friends operation, so I'm thinking less from appearances (the giant can of empty Miller Lite being one example) and for safety/efficiency.
