I searched but had no luck on this oddball question. Is there any evidence or documentation on having the pH balanced close to 7 vs in the 5’s?

I ask this because I have to put a ton (literally!!!) of lime down every year on my 1 acre, because my soil is VERY acidic. When I moved in it was 4.8 in the front yard and 4.6 in the backyard. LOTS of moss! Lol I am up around 6.5ish now, so next year it should be less. HOWEVER, what I am getting to is I have about 7-8 taps at home and I wanted to include the lime as a business expense. IF I can prove it is helpful OR helps with efficiency (increase sugar content even if its .25% makes a difference. 1.25% vs 1.5% sugar is a pretty big difference. It’s 6.98 gallons of syrup vs 5.81 gallons syrup from 400 gallons of sap. Saves time and fuel in the evaporator OR RO.
I know we are talking about $200 worth of lime, BUT, savings are savings when it comes to taxes! Plus, if the law or break is there, no reason not to use it!
