View Full Version : 5 year old syrup. Would it still be OK?

Hi,
I've been out of it for 5 years but I did tap my maples for a couple seasons. 2018 I finished 3.5 gallons and still have almost half left. I remember one jar looking ropey then it settled out. I kept it in the basement pantry. I've been thinking I could reboil and re jar it. Maybe keep in the freezer after that. Is that a normal process? Is it usable? Or do I have to toss it?

Five year old syrup stored in a pantry that was ropey to begin with??? Hard pass for me personally.

If it was hot packed properly and isn't moldy, it shouldn't be significantly worse than it was when bottled.
If not, not sure.
I do think it is difficult to get poisoned with maple syrup. As long as you take it over 180F, its more whether it tastes OK.
But I'm not sure ropiness is something that settles....

I agree, if it was not good when it was bottled its not good 5 years later. Ropey is ropey forever....toss it
