roof jacks and fire risk

I've been planning the layout in the sugar shack and just realized that the roof jacks I see used for smoke stacks all look to be single wall stainless. Around here for residential use they must be double wall and insulated to prevent fires.

I won't be sleeping in the sugar shack ( intentionally ) but I sure don't want to start a roof fire either. What is the normal way to put them in so they have enough clearance and no fire risk ????

My roof jack is a single wall 11" pipe and the stack form my evaporator is 8". There is a collar that goes over the 8" stack so that there is a 1.5" gap between the stack and the roof jack. If you click on the left side picture of my sugar house in my photobucket pictures you can see the 2 different diameters of pipe. I also put some metal roofing scraps on the rafters inside the sugar house to deflect the heat from them. So far the paint isn't even discolored.
